Most of us are familiar with the cotton candy machines at fairs and carnivals, but fewer people know that you can make cotton candy by hand in an awesome fusion of hands-on kitchen fun and science.

Cooking Issues, a culinary blog, shares a great how-to video and interesting background information about hand pulled cotton candy—known as Dragon's Beard in many areas of the world. Sugar, when heated to the right temperature, becomes extremely ductile and can be stretched again and again. How many times? With just a simple hand pulled cotton candy technique 14 pulls can yield over 16,000 ultra-fine strands of delicious handmade cotton candy.
The process is extremely simple and requires only some basic kitchen supplies like a pot, sugar, corn syrup, a thermometer, cornstarch, and a cookie sheet. Check out the video above to see the process, practically culinary magic, in action.
